I have a particular interest in cookies this holiday season. My son enjoys alot of activities including being in the kitchen, so I thought I'd try out some new found cookie recipes that are quick and easy and hopefully tasty. Since there's very little time left before the big holiday season arrives, we must get started!
So, I'm going to list the ingredients, instructions, etc. and perhaps you'll follow along daily. At the end, your holiday baking will be done, and you may even have some gifts to share with friends, neigbours, and family.
First we are going to try a German recipe for coconut macaroons.
You will need:
2 3/4 cups flaked coconut, toasted (to toast coconut bake at 350 on a cookie sheet for about 5 minutes)
4 egg whites
1 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon almond extract
Preheat oven to 250 and line cookie sheets with parchment paper. In a large bowl, whip the egg whites with electric beater until stiff enough to cut it with a knife.
Gradually sprinkle in sugar, cinnamon, and almond extract while continuing to mix on
low speed. Fold in the toasted coconut by hand and scoop or spoon batter onto cookie sheet. Bake for 20 to 25 minutes until cookies are dry and peel easily off the paper. Cool on racks and store in airtight containers.
That's it. Sounds easy enough. Not even I could mess this one up.....so let's go.
